Akkha Masoor – A Protein-Rich Kolhapuri Lentil Curry
Introduction
Akkha Masoor is a famous Kolhapuri curry prepared using whole masoor lentils and aromatic spices. This traditional recipe is rich in protein, fiber, iron, and several essential nutrients that support overall health. Whole masoor has a naturally low glycemic index, making it an excellent ingredient for diabetes-friendly meals.
The roasted sesame and coconut paste gives the curry its rich texture while keeping it nutritious.
Why This Recipe Is Diabetes-Friendly
Whole masoor provides slow-digesting carbohydrates, protein, and fiber that help maintain steady blood sugar levels. Using wholesome spices and moderate oil further enhances its nutritional profile.
Ingredients
For Pressure Cooking
1 cup whole masoor dal
1 cup water
For Masala
1 tbsp sesame seeds
3 tbsp desiccated coconut
2 tbsp oil
2 onions
2 tsp ginger-garlic paste
1 tomato
Coriander leaves
Red chilli powder
Coriander powder
Cumin powder
Garam masala or Kolhapuri masala
Turmeric

Water
Method
Pressure cook the whole masoor until tender but not mushy.
Dry roast sesame seeds and coconut until golden.
Grind into a fine powder.
Sauté onions until lightly golden.
Add ginger-garlic paste followed by tomatoes.
Add all powdered spices and cook until aromatic.
Stir in coriander leaves and roasted sesame-coconut powder.
Add cooked masoor with some cooking liquid.
Simmer for 5–6 minutes until flavors blend.
Garnish with coriander and serve hot.

Jowar roti

Avoid overcooking the lentils.
