Amboli – A Traditional Brown Rice Pancake For A Diabetes-friendly Meal
Amboli – A Traditional Brown Rice Pancake for a Diabetes-Friendly Meal
Introduction
Amboli is a traditional Malvani delicacy that resembles a thick, soft dosa. It is prepared using fermented rice batter and is commonly enjoyed as breakfast or a light meal. This healthier version replaces refined or polished rice with brown rice flour, increasing the fiber content and making it more suitable for people with diabetes.
The fermentation process improves digestibility while creating the signature soft texture and tiny holes that make Amboli unique.
Why This Recipe Is Diabetes-Friendly
Brown rice contains more fiber than polished rice, which helps slow glucose absorption. Using minimal oil also makes this recipe lighter and healthier.
Ingredients
2 cups brown rice flour
Water as required
Salt to taste
Method
Mix brown rice flour and salt in a bowl.
Gradually add water while stirring until a smooth, lump-free batter forms.
Adjust the consistency depending on your preference:
Thin batter for crisp Amboli with holes.
Slightly thick batter for ...
... soft Amboli.
Heat a pan and lightly grease with a few drops of oil.
Pour the batter quickly and cover the pan.
Cook for 3–4 minutes until the bottom becomes crisp.
Flip and cook for another minute.
Serve hot with coconut chutney.
Serving Suggestions
Enjoy with:
