Amboli is a traditional Malvani delicacy that resembles a thick, soft dosa. It is prepared using fermented rice batter and is commonly enjoyed as breakfast or a light meal. This healthier version replaces refined or polished rice with brown rice flour, increasing the fiber content and making it more suitable for people with diabetes.
The fermentation process improves digestibility while creating the signature soft texture and tiny holes that make Amboli unique.
