1 banana flower, cleaned and finely chopped
½ cup sweet potato, cubed
½ tsp turmeric powder (divided)
½ tsp red chilli powder
¼ tsp garam masala powder
1 drop stevia (optional)

¼ cup fresh coconut, finely chopped
2 green chillies, chopped
For Tempering
2 tsp mustard oil
2 bay leaves
½ tsp cumin seeds
½-inch ginger, grated
4 garlic cloves, grated
For Garnishing
2 tsp freshly grated coconut
How to Make Mochar Ghonto
Clean the banana flower by removing the outer purple layers and separating the florets.
Remove the hard stamen and the thin translucent covering from each floret.
Finely chop the florets and soak them in water mixed with lemon juice and a pinch of turmeric for about one hour.
Drain the florets and pressure cook them with ½ cup water for two whistles.
Once cooled, lightly mash the cooked banana flowers using the back of a ladle.
Grind the chopped coconut and green chillies together without adding water to prepare the masala.
Heat mustard oil in a heavy-bottomed pan over low heat.
Once the oil begins to smoke lightly, add bay leaves and cumin seeds. Allow them to splutter.
Add grated ginger and garlic and sauté for about 30 seconds.
Add the cubed sweet potatoes, red chilli powder, salt, and about ¼ cup water.
Cover and cook for 5–7 minutes until the sweet potatoes become tender.
Add the cooked banana flower and stevia, if using, and mix well.
Cover and cook for another 2 minutes.
Stir in the coconut-green chilli masala and mix thoroughly.
Adjust the seasoning, sprinkle garam masala powder, and cook for 2 more minutes.
Transfer to a serving dish and garnish with freshly grated coconut.
