What is mushroom extraction?

• Depending on the mushroom, mushroom extraction involves either using hot water, alcohol, or both to dissolve the cell walls.

• Dried mushrooms should be placed halfway up a quart-sized glass jar.

• Make sure the alcohol covers the mushrooms fully in the jar, but leave approximately a 1/2-inch gap at the top.

• To stop the alcohol from corroding the lid, sandwich parchment paper between the jar and the lid.

• Jar should be left on the counter for one month. Shake regularly.
• Pour the alcohol that has been infused with mushrooms into a different container after it is finished.
