Mutton Spell Wonder In Parsi Dishes

When it comes to Parsi cuisine, mutton is their second best choice. The first being the egg, it finds its place in almost every signature Parsi dish, be it breakfast or main course. However, mutton is not far behind and even dominates when it comes to the main course. Parsi food is known for manipulating mutton in its every possible way, sometimes combining it with daal, berries and sometimes serving it as accompaniment of pav. Though I am not a great expert of Parsi food, but I am an ardent admirer of the cuisine and have several favorite dishes. Here I will list down three top favorite Parsi dishes of mine that have their own individuality and uniqueness.
1. Kheema Pav- Yes, the simple and almost anytime dish for me, Kheema Pav tops my list of favorite Parsi food. The boneless mutton pieces beaten to soft kheema are slow cooked in onion, tomato and ginger-garlic gravy with chosen spice mix. The end result is creamy gravy with tiny mutton chunks which is served with freshly cut onion pieces and lemon. It is served in hot brun with generous amount of maska. Simple tear the brun from the middle, smear one part in kheema ...
... gravy and put it in. Ahhhh....the heaven in here indeed. To complete the dish ask for a fresh lime soda.
2. Mutton Dhansak- This dish is my favorite not only because of its great taste but also because it is the one dish that takes care of my entire quota of legumes, veggies and meat intake in a meal. Mutton is pressure cooked with lentils and veggies like potato, brinjal, pumpkin, methi and of course onion. Everything is then blended together baring the meat and then cooked together in chosen spice mix. You can combine it with any mild pulav or simply have it with pav, the taste blows out my mind everytime I have it.
3. Parsi Berry Pulav- Finally the one that serves as a one pot meal and simply demands nothing else to complete it. Parsi Berry Pulav as the name suggests is a rice dish cooked with special Parsi berries. Yes, mutton too forms an important part of the dish. Rice is half cooked and then layered with cooked mix of berries, mutton chunks and spices. Safforn milk is sprinkled from above the entire formation and is then cooked in low fire. I generally ask for a glass of fresh lime soda with the dish.
