Every one of us loves our tea time be it in the office, home or any holiday. Tea –time is a relaxation time and so everyone likes to enjoy it. Even if you do not drink tea or coffee, you still love it as you can get a well deserved break. Around tea time, people like to munch something. Since most of the people are in office, the handy snacks are mostly cookies, donuts etc. Well, there is nothing bad with that if you take them in moderation. How about replacing them with some healthy snack that you can prepare easily at home and carry to the office as well?

Vegan Mushroom Roll
Ingredients
Onion – 1
Celery stalk – 2
Olive oil
Chestnut Mushroom – 500 gm
Dijon Mustard – 1 tbsp
Sea salt
Freshly ground black pepper (packaged one will also do)
Bread crumbs – white bread – 80gm
Parsley – ½ bunch
Fresh thyme – 2 sprigs
Sheets of ready-rolled puffs – 2 (easily available in food stores)
Almond Milk
Sesame seeds – 2 tsp
Method
1. Preheat the oven at 200°C/400°F. ...

2. Chop the onion, celery finely. Take a large thick bottom pan. Add one tablespoon of olive oil and keep at medium flame. Add the onion and celery and sauté for 10 to 15 minutes. Until then, chop the mushrooms.
3. Peel the garlic and crush it. Add to the mixture and then add mushrooms. Cook for 5 more minutes or until you see that mushrooms have turned soft. Add some white wine, season it with salt and pepper as per your taste. Cook again for 5 to 10 minutes or until the liquid bubbles away, set aside to cool.
4. When cooled, add the mixture and white breadcrumbs in a large bowl. Add finely chopped parsley leaves and then add thyme leaves. Stir well.
5. Cut the puff pastry sheets as per your choice and add to them a quarter full spoon of the mixture. Mould it in a sausage shape. Take the help of the back of the spoon for giving it shape.
6. Apply almond milk along the pastry edges and carefully fold the pastry. Crimp with a fork. Repeat it with other puff pastry sheets until there is mixture left.
7. Place the ready rolls on the baking tray. Again apply a coating of almond milk with a brush and sprinkle sesame seeds. Bake in the oven for about 25 to 30 minutes or until the color turns golden. Serve hot or at room temperature with your favorite sauce.
