How To Make Healthy Poha Recipe For Breakfast

Poha is one of the most popular and loved recipes from the central parts of the country, Maharashtra. From the ease of preparing to the nutrition content involved, it is deemed fit for your breakfast or brunch. Ideally, people make it using white poha, but if you want to enhance its nutritional value, you can use red poha. Get on with the following step-by-step procedure to make delicious and healthy poha for this Sunday brunch.
Ingredients
2 cups poha, 1 finely chopped onion, ½ spoon turmeric powder, 1 spoon mustard seeds, 2 spoons peanuts, 1 green chilli, 1 tsp sugar, boiled potato, green peas, grated carrot, cauliflower florets, tomato, 2 tsp oil, 2-3 tablespoons of lemon juice and salt as required.
Method
1. Rinse the poha in running water till they are soften. Mash them using your fingers to ensure it has softened properly.
2. Sprinkle some salt and sugar, and mix the poha gently. Turmeric is also a widely used ingredient, but to avoid its raw flavour, you can use it later while frying the onions.
3. Dry roast peanuts till they become crunchy and keep them aside.

... some oil in a pan and add mustard seeds. Allow them to crackle. After which, add onions and fry till they turn golden brown or translucent. Add curry leaves, green chillies and fry them well. You can also add boiled potatoes in cubes.
5. Add green peas and cauliflower florets along with grated carrot. Once all the vegetables are cooked, add finely chopped tomato and fry till the oil departs.
6. Now is the time to add poha along with roasted peanuts.
7. Cover with a lid and steam the poha for 2-3 minutes on low flame.
8. Check and stir again after 1-2 minutes. Turn off the flame and let the contents remain in pan for another 2-3 minutes.
9. Remove the lid and pour some drops of lemon juice and garnish with chopped coriander leaves.
10. Best served hot with tea. If you want to enhance its taste, you can sprinkle some sev over the poha while eating.
