Chocolates consumed today are mainly in the form of sweet chocolate, milk chocolates or white chocolates, dark chocolates. Chocolates are mainly made up from the seeds of cacao tree which has a bitter taste. It is then fermented dried cleaned and it is then roasted to form the cocoa mass which is the pure chocolate. Unsweetened chocolates are bitter in taste and are mainly used in the pure form for the cooking purposes. It is also known as baking chocolates or cooking chocolates. The main ingredients of unsweetened chocolates are chocolate liquor with some form of fats added to form a solid substance. Roasted cocoa beans give the deep chocolate flavour to the unsweetened chocolates. Dark chocolates are also known as black chocolates. The cocoa powder, sugar and butter are placed in a jar and then the jar is placed in a sauce pan containing water. The sauce pan is then heated and the butter starts melting. The mixture should be stirred often and after about thirteen minutes the butter melts completely and the jar is taken out of water and vanilla essence is added to the mixture. This liquid chocolate is then placed in a tray covered with a parchment paper. Then it is refrigerated for about two hours to harden the chocolate. Then it can be broken into chunks to get the yummy chocolate chips. Nowadays with the increasing rate of diabetes among people of all age groups sugar free items are gaining their importance day by day. Sugar free chocolates are now having high demand. Sugar free dark chocolates have the same rich enhancing taste without the fear of the negative effects of sugar. These sugar free dark chocolates are mainly made by using a plant based sweetener called stevia which has no calories. These sugars free dark chocolates are made up of 70% of cocoa solids which have antioxidants that protects are cells. Sugar free dark chocolates are made for those people who enjoy relishing the bitter and pure taste of dark chocolates.
