The Java and Sumatra Islands of Indonesia are known for their rich tasting coffees and these are the native places of the habitat called Luwak. These animals live mostly in trees and they eat coffee cherries as their favorite food. Generally, they target the fully-ripened cherries and the pulp and the flesh of the fruits get digested in the stomach of these animals. But, the beans are let out of the stomach via the process of excretion. They stay in the stomach for a day or so, where the enzymes act on the beans. These processes give the beans the unique taste and aroma. The processes taking place within the stomach is responsible for the rich flavor and after the process they get excreted from the stomach.
These beans are collected from the excretion by the local farmers and they are sold to the manufacturers of kopi Luwak for brewing purpose. Generally, the locals are paid $20 for each KG of beans they are collecting. After processing, they are sold to international markets, at the rate of 600-700 US dollars per kilogram thereby making it the most expensive of the other Gourmet alternatives available. Only special coffee shops sell this beverage.
