It’s Time To Welcome Fall With Easy Party Food

There’s nothing like a change of seasons to inspire entertaining. Welcoming the shift in weather, scenery, and available fresh foods really gets the party wheels turning. But as with most things, who has the time to throw a party with elaborate dishes and fanciful settings. Why not create your next event with easy party food ideas?
As autumn arrives with its bursts of red, yellow, and orange, and the air is crisp and cool, there’s something about warm, gooey, cheesy foods that strike a chord. But the fresh fall harvest of vegetables and fruits generates cravings for recipes that make the most of these fall flavors in a light and healthy way.
Stores and markets are bursting with apples, artichokes, eggplant and pomegranate. These colorful fall goodies are just a small portion of available fruits and vegetables you can turn into easy party food. ... poppers are perfect for a fall party. People are ready to begin eating dishes that qualify as comfort food, but let’s not get too heavy all at once. There may be some lingering healthy, light-eating drive left in some of us.
Strike a balance between heavier items and lighter ones to create a party that includes everyone.
Here are two items that span the spectrum for fall:
Caramelized Onion, Gruyere, and Bacon Dip (Cooking Light)
3 ½ cups chopped onion
2 ounces Gruyere cheese, shredded and divided
2 Tbs chopped fresh chives
⅓ cup canola mayonnaise
⅓ cup fat- free sour cream
¼ tsp salt
¼ tsp black pepper
3 bacon slices, cooked and crumbled
Directions:
Preheat oven to 425 degrees.
Heat a large skillet over medium-high heat. Add onion to pan; saute 5 minutes, stirring frequently. Reduce heat to low, cook 20 minutes stirring occasionally. Cool slightly.
Reserve 2 Tbs cheese. Combine remaining cheese, caramelized onion, 1 Tbs chives, and the remaining ingredients in a medium bowl. Transfer the mixture to a one-quar t baking dish coated lightly with cooking spray.
Sprinkle with reserved 2 Tbs cheese. Bake at 425 for 20 minutes or until browned and bubbly. Sprinkle with remaining 1 Tbs chives.
Serve with baked crackers.
Balsamic-Glazed Squash (Food Network)
Toss 1 large acorn squash (cut into wedges) in a baking dish with 3 tbs melted butter and balsamic vinegar, sliced shallots, 6 chopped sage leaves, 1 Tbs honey, a pinch of ground coriander, and salt and pepper. Add ½ cup of water and roast at 450 degrees for 20 minutes; flip; sprinkle with ¼ cup hazelnuts and roast 20 more minutes.
