How To Make Pasta With Parmigiano-Reggiano

Ingredients:
• 2 pounds ground chicken
• 1 diced onion
• 2 ½ teaspoons ground cinnamon
• 2 ½ teaspoons ground cloves
• 2 ½ teaspoons ground cumin
• 2 ½ teaspoons powdered ginger
• 2 ½ teaspoons dry mustard
• 1 teaspoon grated nutmeg
• ½ teaspoon kosher salt
• ¾ teaspoon of cocoa powder
• 1 ½ cups tomato sauce
• 4 cups of chicken stock
• 2 tablespoons of apple cider vinegar
• 2 tablespoons of Worcestershire sauce
• 1 pound bucatini noodles, boiled in salted water, drained
• ¼ cup of grated Parmigiano-Reggiano

Directions:

1. In a large pan cook the chicken mince slowly.

2. While the chicken mince is cooking and slightly, add the onion and stir till the chicken is fully cooked and the onion becomes transparent.


3. Drain it and then add the spices and cooking for around 2 more minutes.

4. Slowly stir in the tomato sauce.


5. Once it’s mixed well, add the chicken stock, vinegar and Worcestershire ...
... sauce. Let it simmer and cook for 1 hour.

6. Put the pasta bucatini in a bowl and add the sauce you just made for the pasta recipe.


7. Add the Parmigiano-Reggiano and serve it hot!

How To Make Pasta With Cauliflower

Ingredients:
• 1 ¼ cups of pitted green olives
• ½ cup of chopped fresh parsley
• ½ a cup of olive oil
• 1 head cauliflower that’s cut into florets
• ½ teaspoon of salt
• 3 garlic cloves that are chopped finely
• ½ teaspoon of dried red chilli flakes
• ¼ cup of water
• ¾ pound of dried spaghetti
• 1 ounce of finely grated Pecorino Romano and keep a little more aside to garnish and serve
• ¾ cup of whole almonds with their skin that are toasted and chopped

Directions:

1. Grind the olives and parsley until they’re coarsely chopped. Transfer to a bowl.

2. Heat oil in a skillet over medium flame and cook cauliflower with salt, stirring until golden brown.


3. Add garlic and chilli flakes. Cook until cauliflower is done and garlic is golden.

4. Add the water and boil for a minute.


5. Combine the olive mixture and stir till it’s heated through.

6. Meanwhile, boil pasta in salted water until al dente. Drain and return to pot.


7. Add the cauliflower mixture, mix. Add cheese and mix again.

8. Sprinkle pasta recipe with almonds and serve, with additional cheese on the side.
