The consistency of your base is an important factor for you would not like it to become too thick or too watery. Now, lets look at the various seasonings we can add to our sauce. Some of the spices that you can add to your sauce are red pepper flakes, oregano, mustard, paprika, cloves, cinnamon, garlic and so on. To add sweetness to your sauce, you could use sugars like palm sugar, cane sugar, dark brown sugar etc. Always remember not to overly add sweeteners in your sauce, because when you use a hot grill, the sugar will burn easily, resulting in the food becoming black. Salt is also a very important factor to look out for. It adds flavor and balances the sweetness and acidity in an equal manner. Use it sparingly and check the taste every time you add something into your sauce. Also avoid adding sauce thickeners such as corn starch, flour or cream as they will take away the flavor.

So now lets look at exactly what the steps are, in which you need to follow to make the perfect bbq sauce. Take a large pan which should be enough to hold up all the ingredients and add up the following things:

ketchup(500 ml), cider vinegar(50 ml), 1 onion(chopped), 2 garlic cloves(chopped), 1 tsp sauce, 1 tsp coriander powder, 1 tsp cumin powder, 2 finely chopped red chilies, 1 tsp sugar and salt. Add all these in your pan and raise the temperature until it boils then reduce the heat slowly. Do not cover your pan, stirring occasionally. Reduce the heat if the sauce begins to stick. Do not add water while cooking as this well extend the reduction process which normally would take around 4 hours depending on your ingredients. It will take around 24 hours for your sauce to cool down properly and for the ingredients to mix properly.

Keep your BBQ sauce in an air tight jar so that it can be used continuously. Also you should store it in the refrigerator and your sauce will be good for a week. Follow these simple instructions and your homemade BBQ sauce is ready.
