How To Smoke Ribs-00-1958
Preparing smoked ribs can be a tough project.
Tenderness and smokiness combined is the goal, but each factor in some part is preferred. If you want to grill ribs like the gurus, then you will need to master this balance. Lets talk about how to achieve this illusive recipe.
Achieving Smokiness in your smoked spare ribs is best delivered by using a quality smoker.
Begin by making sure that the smoked ribs is as far away from the heat as possible. Using some sort of heat damper works the best. Many smoking grills come equiped damper doors. Use it. You only want the smoke to get to the ribs and not the heat.
Peel off the thin membrane on the underside of the ribs first. You can even coat the ribs for smoking with a good layer of prepared mustard first if you wish to. This will cook off during the smoking. You can also add spice prior to cooking.
Smoke the meat for about 3 hours, depending on how much meat you are cooking at one time. Add wood as needed. Keep the flame to a quiet level so as not to cook the smoking ribs.

Each rack must be wrapped individually. Slow cook in the oven for six hours at 225 degrees.
