Want To Cook Smoked Duck Breast? Here’s An Easy Smoked Duck Breast Recipe To Get You Started

Moulard ducks are prized because of their breasts, which are bigger than those of most other species of duck. These birds produce fois gras (fat liver) thanks to specific breeding tactics including force-feeding corn. Duck liver from a Moulard duck is also prized, but smoked duck breast from this fowl is the most popular of its parts.

If you’re a fan of smoked duck, you already know you won’t find it on the menu in just any restaurant. Duck is considered a delicacy, and smoked versions of this fowl have a deep and wonderful flavor that make it a great main dish or side dish.

Duck breast lovers believe that no other meat on earth is quite the same. Regardless of which smoked duck breast recipe is used in the preparation, the flavor is one of a kind, smooth, consistent and refined. Many companies sell this special meat in both plain and smoked varieties, but it’s not that hard to prepare yourself at home.

Here’s a smoked duck breast recipe for a great fettuccine dish. It makes two entrée portions.

YOU NEED: 1 Tbs butter; half cup julienne ...
... carrots; 2 Tbs sliced sun-dried tomatoes; 4 sliced smoked portabella mushroom caps; half cup leeks, julienne; 1 tsp garlic, minced; 2 oz. Madeira wine; 12 oz. split and sliced smoked duck breast; 8 oz. heavy cream; 8 oz. chicken broth; 2 cups Asiago cheese, grated; 1 Tbs parsley; 1 Tbs chopped chives; half tsp pepper.

DO THIS: Saute the carrots in a pan with butter over med. heat for one minute. Add mushrooms, tomatoes, leeks and duck, and sauté for two more minutes. Take duck out and put on warm plate. Add the garlic to the pan and stir. Raise heat to medium-high, then add the chicken broth and wine. Mix everything together and continue to cook until liquid is reduced by half..

Now add the cream and mix. Simmer until cream is half reduced. Add the fettuccine, mix well to coat, then pour onto two plates. Top with the sliced duck breasts. Sprinkle with cheese, parsley, chives and pepper..

This is a smoked duck breast recipe you’ll probably want to cook over and over.
