YOU NEED: 1 Tbs butter; half cup julienne ...

Madeira wine; 12 oz. split and sliced smoked duck breast; 8 oz. heavy cream; 8 oz. chicken broth; 2 cups Asiago cheese, grated; 1 Tbs parsley; 1 Tbs chopped chives; half tsp pepper.
DO THIS: Saute the carrots in a pan with butter over med. heat for one minute. Add mushrooms, tomatoes, leeks and duck, and sauté for two more minutes. Take duck out and put on warm plate. Add the garlic to the pan and stir. Raise heat to medium-high, then add the chicken broth and wine. Mix everything together and continue to cook until liquid is reduced by half..
Now add the cream and mix. Simmer until cream is half reduced. Add the fettuccine, mix well to coat, then pour onto two plates. Top with the sliced duck breasts. Sprinkle with cheese, parsley, chives and pepper..
