Well, here is a little detail of the growing and processing process that it goes through. In February and March the Kona coffee trees is blooming, and so the plants are covered with Kona Snow, which is small white flowers. ... are then inside the fermentation tank for either 12 hours at a low level or 24 hrs on a higher elevation. After the time in the fermentation tank the beans are rinsed and spread out to dry on the drying rack, known as a hoshidana. It will take between 7 - 14 days to dry the coffee beans to the optimum level of moisture which is between 10 and 13 %. The growth of ochratoxin A, which is actually a harmful mycotoxin that may be hazardous to the human health, will take place if there is an excessive amount of moisture content in the coffee beans.
After this process the beans are stored as parchment which is actually milled off of the green beans just before roasting or wholesale. Based on the type of seeds the Kona coffee beans will be categorized. 2 beans per Cherry, which is flat on the one side and oval on the other, will be classified as Type I beans. Peaberry which in fact is one round bean per Cherry is classified as Type II beans. The size, moisture, content as well as the purity of the coffee bean type will help to further grade both of these types of coffee beans.
There are various grades of Type I Kona Coffee, and they are generally called Kona Extra Fancy, Kona Fancy, Kona Number 1, Kona Select and also Kona Prime. As to the Kona Type II coffee there are Peaberry Number 1 and Peaberry Prime. However there is also a lower grade of Kona coffee referred to as Number 3, they are legally prohibited to label it as Kona Coffee.
