Mark Birnbaum, Eugene Remm and Michael Hirtenstein started hospitality management company EMM Group in 2006. In a few short years, EMM Group has become New York City’s most sought after party planners and venue management company. Mark Birnbaum, Eugene Remm and Michael Hirtenstein work with only the best chefs in the industry. They have worked with Franklin Becker, who was the Lead Chef for EMM Group Restaurants Abe & Arthur’s and Lexington Brass from 2009 to 2012. EMM Group also has the culinary expertise of Catch’s Lead Chef and Top Chef Winner Hung Huynh, as well as the Lead Pastry Chef at Catch, Thiago Silva.

Thiago Silva is just one of the many reasons Catch has repeat celebrity clientele like Actress Sofia Vergara, NY Knicks Basketball Star Carmelo Anthony, Amare Stoudemire and Rapper Fabolous, just to name a few. ... education he knew that with the support of his family and the guidance of his culinary mentor, chef Alfred, he would get a better education than anything he could ever pay for. Silva credits his family, chef Alfred and New York City for inspiring him to further his career as a pastry chef.

Having worked closely with Catch’s Executive Chef Hung Huynh, Silva expertly designed a pastry menu that is both imaginative, fun, and delicious. A menu favorite among Catch guests is easily the Peanut Butter Cup Three Way. A chocolate lover’s dream, the Peanut Butter Cup Three Way is a milk chocolate soufflé with peanut butter ice cream, a chocolate covered peanut butter popsicle and a miniature peanut butter cup. Silva wanted a dessert menu that was fun, and a menu that everyone would love.

Thiago Silva’s innovative contributions to the menu, helped develop the character at Catch restaurant. In addition to staple menu desserts, Thiago Silva has made some outrageous cakes for EMM Group’s special events and for celebrity clientele like Sophia Vergara. He has the talent and the passion for making desserts and pastries that keeps patrons coming back time and time again. It is rumored that Silva will work with Mark Birnbaum, Eugene Remm and Michael Hirtenstein again to create the dessert menu at EMM Group’s newest venue at 199 Bowery, set to open this fall.
