Kerala, the Land of Spices, is known for its spicy and hot foods. The cuisine of Kerala is famous all over the world. In Kerala, the traditional way of serving food is on the banana leaves, but some now serve it on steel plates. The cuisine of the state is characterised by the use of ingredients extensively grown on its fertile lands along the coconut- fringed beaches, around the back waters and on the slopes of the Western Being a rice growing region, parboiled rice make the staple food of the state. People of Kerala are known to prepare delicious varieties with rice flour and beaten rice.

The small state surprisingly has a variety of cusine in its different parts. The Malabar region in the north which has a large Musilim population is particularly famous for its biriyanis and the southern part which is the Travancore region is known for its Syrian Christian specialities. The vegetarian dishes are common all over the state.

Generally, the Kerala cuisines are hot and spicy, fresh, aromatic, and flavoured. As Kerala is a coastal region and rice is the main staple crop of Kerala, local people thrive mostly on seafood ...
... mostly fish, coconut and rice. They use rice, coconut and fishes in many different cuisines.

Among the many light snack items, banana and jackfruit chips are much enjoyed by the local people. These light snack items can give even the more popular French Fries and potato chips a tough competition. No wonder, they are much sought after food items elsewhere too.

A typical meal for vegetarians in the region includes the famous parboiled rice, masala curry, which go with a couple of fresh coconut curries made of either banana, bitter ground string beans, olan, kalan, pulishery papadams chips like jackfruit, tapioca or plantain, all deep fried in coconut oil. But in the case of the Palghat Brahmins, masala curry is replaced with sambhar along with the indispensable rasam with coconut based curries, the remaining items being the same.

Some of the famous cuisines of the state which are known for their wonderful flavour are Appam, Puttu, Idiypam, Idli, Dosa, etc. are mostly taken as breakfast.

Idli and Dosas are very famous not only in Kerala but all over the India as well as other parts of the world. You will find Idi, Dosa, Vada and Sambhar in any Indian restaurant in any country. Idli is prepared with the boiled rice and then crushed and moulded in the forms of small bowl size cakes. Vada is prepared by various pulses and is also like idli but it is fried unlike the idlis which are steamed. Dosa is prepared with the mixture of rice, some pulses and then given a shape of big size chapatti by spreading the paste over a large rectangular pan and then heated with some butter for some time so that it becomes rigid and look like a big chapatti. All these idli, vada and dosa are served with the Sambhar and coconut sauce.
