Foam has two important qualities, density and thickness. High density foam is recommended over residential quality foam, which is not made for the wear and tear of restaurant usage. Some manufacturers use 1-inch thick foam which can be uncomfortable to sit in. Others use 2-inch thick foam, which is an ideal balance of comfort and cost, and is usable for most restaurants. Premium booth manufacturers may use 3-inch thick foam, which is more expensive and usually used in high end hotels.
