Fresh produce and bakery products are delicate. Berries bruise, salad leaves wilt, cream filled pastries sweat and cakes soften when they get warm. In the UAE climate, a box that sits in a van for an hour can be enough to turn a perfect product into a disappointment. Many suppliers use gel ice sheets to solve this problem, because a sheet spreads cold evenly across a tray without crushing the items beneath.

A gel ice sheet is a flat panel made of many small linked cells filled with gel. It can be frozen, used and refrozen many times, and it does not release carbon dioxide gas as it thaws. Unlike loose packs, a sheet covers a wide area in one piece, so there are fewer warm gaps. For flat trays and wide boxes, which are common in bakeries and produce packing, that even cover makes a clear difference.

Why does it suit these products? Fresh produce needs to be cool but not frozen. Frozen leaves turn limp and brown once thawed, so direct contact with very cold products such as dry ice can harm them. A gel sheet stays near the freezing point of the gel, which is cold enough to slow spoilage but gentle enough to protect ...
... the product. Bakery items need similar care. Cream, custard and fresh fruit toppings need to stay chilled, while the pastry should not be soaked by condensation. A sheet that is kept dry and separated from the product by paper or a liner works well.

Start with the right size. Measure the inside of your usual box or tray and choose sheets that cover most of the area. Many sheets can be folded or cut along the cell lines, so you can adapt them to different box sizes without waste. It is better to have one sheet that fits well than several small packs that leave gaps.

Freeze them flat. Lay sheets on a flat shelf in the freezer so they set in the correct shape. A sheet frozen in a crumpled position will not sit neatly against the product and can leave gaps. Give them enough time to freeze solid, usually overnight, and keep a rotation so that a fresh set is always ready.

Pack in layers. For a deep box, place a sheet at the bottom, add a tray of product, add another sheet on top and repeat. For a flat tray, one sheet across the top is often enough, because cold air sinks toward the product. Use a layer of paper or thin cardboard between the sheet and delicate items to prevent condensation marks and to soften the contact.

Choose a good box. Even the best sheet cannot compensate for a thin, leaky box. Use an insulated container with a tight lid, and avoid leaving empty space. Pre chilling the box before you pack helps as well, because it removes the heat stored in the walls.

Compare with other formats. For irregular or mixed loads, small gel packs may be easier to position. For very long trips, or for frozen goods, dry ice or larger packs may be needed. Many businesses keep sheets, packs and other cold chain products together and choose the right one for each job. You can see the available gel ice sheets in Dubai alongside the single cell and multi cell gel ice pack range to compare sizes against your boxes.

Look after your sheets. Wipe them clean after each use, inspect the cells for damage, and keep them away from sharp edges. A punctured cell reduces cooling and may leak. Replace damaged sheets promptly, and keep a count so that none go missing between deliveries.

Finally, test before you commit. Pack one box exactly as you normally would, leave it for the length of a typical delivery and measure the temperature on arrival. If it is within your target, you have the right setup. If not, add a second sheet or improve the insulation. The wider range of cold chain products also includes pouches and bottles that can help for different packing situations.
