Choti Elaichi Vs Badi Elaichi: Which One Should You Buy?

Many Indian kitchens keep both choti elaichi and badi elaichi, but beginners often wonder which one they actually need. The answer depends mainly on the type of food you prepare.

Choti elaichi generally refers to green cardamom. The pods are small and green with aromatic seeds inside. Its flavour is sweet, floral and lightly citrusy. This makes it particularly suitable for chai, coffee, kheer, shrikhand, rabri, halwa and many Indian sweets.

Badi elaichi refers to black cardamom. The pods are considerably larger, dark and wrinkled. Its aroma is smoky, earthy and deep. It is commonly used in biryani, pulao, rajma, dal makhani and rich Indian gravies.

When comparing green elaichi vs black elaichi, the biggest difference is flavour. Green cardamom provides a bright aromatic top note, while black cardamom provides a deeper smoky base.

For chai, green cardamom is usually the better choice. Lightly crush one or two pods and simmer them with the tea. For desserts, green cardamom complements milk and sugar particularly well.

For biryani, black cardamom can be used alongside cloves, cinnamon, bay leaf ...
... and other whole spices. One or two pods are often enough for a family-sized preparation because its flavour is strong.

Storage is also important. Keep both varieties in airtight containers in a cool, dry cupboard. Avoid keeping them near the stove because heat can gradually reduce their aroma.

If your kitchen mainly revolves around tea, desserts and milk-based recipes, buy green cardamom first. If biryani, pulao and rich curries are regular dishes, black cardamom is a valuable addition.

Ideally, keeping both gives you greater flexibility and allows you to choose the correct cardamom for each recipe.
