When a non-polar solvent is placed in contact with a non-polar substance, the solvent molecules interact via van der Waals forces, and the substance dissolves. Non-polar solvents are employed widely in the extraction of seed fats and plant essential oils as well as in several organic synthesis reactions. The solvents perform best when the aim is to extract lipophilic compounds or where the mixtures contain polar and non-polar components.
