A Flavourful Journey: Gobindobhog Rice Khichri Recipe

Ingredients:

1 cup Grihika Gobindobhog Rice
1/2 cup split yellow moong dal (lentils)
1 large onion, finely chopped
1 large tomato, chopped
1/2 cup mixed vegetables (carrots, peas, beans)
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon grated ginger
1 teaspoon minced garlic
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/4 teaspoon asafoetida (hing)
2-3 green chilies, chopped
2 tablespoons ghee (clarified butter)
Salt to taste

Instructions:

Rinse the rice and lentils:
Start by thoroughly rinsing the Gobindobhog rice and yellow moong dal under cold water. This helps remove excess starch and ensures a fluffy texture.

Soak the rice and lentils:
Soak the rice and lentils in water for about 30 minutes. This step not only aids in quicker cooking but also enhances their nutritional value.

Sauté the aromatics:
In a large pot or pressure cooker, heat ghee over medium heat. Add cumin seeds, mustard seeds, and asafoetida. Once the seeds splutter, add chopped onions, ginger, and garlic. Sauté until the onions become golden brown.

Add spices:
Introduce turmeric powder, cumin powder, coriander powder, and green chilies to the sautéed mixture. Stir well to coat the spices evenly.

Incorporate vegetables:
Toss in the mixed vegetables and chopped tomatoes. Cook for a few minutes until the vegetables are slightly tender.

Combine rice and lentils:
Drain the soaked rice and lentils and add them to the pot. Mix everything well to coat the grains with the aromatic spices.

Cooking process:
Pour in the required amount of water (typically 3 cups for 1 cup of rice) and season with salt. If using a pressure cooker, close the lid and cook for 2-3 whistles. For an open pot, cover and simmer until the rice and lentils are fully cooked.
