The climate dictates what type of food can be produced as well as the type of recipes demanded. The Russian climate is typically characterized by a long winter and short summer. Russia has very cold winters, but during the summer the temperatures can rise above 30C. In stating this, Russia is the largest country in the world and the climate can vary across the different areas of the country.

With the extremely cold and long-lasting winters the food is designed for warmth. The essential components of Russian cuisine provide lots of carbohydrates and fat. Fresh fruit and vegetables may have been limited during the winter, so the top five components of a Russian meal are potatoes, bread, eggs, meat (especially beef) and butter. Other popular foods include cabbage, milk, sour cream, curds, mushrooms, lard, cucumbers, tomatoes, apples, berries, honey, sugar, salt, garlic, and onions.

Main courses are vegetable and meat dishes. Perhaps Beef stroganoff is the most famous Russian main course. Russian main courses will often include meat (beef, chicken, fish) or vegetables and are served with various salads. Garnishes & dressings such as potatoes, grechka, Russian kasha's and nice sauces and dressings generally accompany the main course.
