In many societies, there is a much stronger drive than before to follow diets that contain no gluten. More than ever before gluten is discussed among ordinary citizens, but also health-conscious individuals and groups.
What is gluten and how does it react in the body? Gluten is a protein that is found in wheat and several other grains. Gluten can be extracted to be added to other products and foods to add protein and flavor, for example. Gluten is also found in other foods, such as barley, rye, and triticale.
Inside our bodies, the protein protease is supposed to break down and process certain proteins such as gluten; however, it is not able to break them down completely. Most people have no reaction to gluten not being processed properly, but there are millions of people worldwide, also in the US, that have adverse reactions to this inability of protease not being able to properly process gluten.

... Many other people are gluten intolerant and feel unwell after eating food containing gluten. Some feel bloated, some have stomach pain, some develop diarrhea, others complain of headaches and other individuals may simply feel nauseous and irritable.
Gluten that finds its way into the bloodstream may also cause inflammation which, as research has shown, can lead to various debilitating conditions. Gluten in itself is not bad for people with strong immune systems; however, because grains such as wheat are often processed and stripped down to produce processed foods such as potato chips, and many other processed foods, gluten can be detrimental to the health of the person whose digestive system is unable to process the gluten. It may be best for certain people to avoid gluten. Examples are those with celiac disease, those with gluten intolerance even if they do not have celiac disease, individuals with known wheat allergies, and those that have been diagnosed with gluten ataxia.
Therefore they turn to a gluten-free diet. This does not mean you can no longer eat well or enjoy a good meal, since hundreds of everyday foods do not contain gluten, such as vegetables, fruit, meat, and eggs if you are not vegan, and even processed gluten-free pasta or bread. There are indeed many good, nutritious food sources that do not contain gluten, also a whole range of instant noodles.
Almost everybody loves noodles. They are almost always easy and quick to prepare and they can be added to a great variety of other foods to create a lovely meal. Eat them on their own or add them to a broth, or prepare a special recipe, and you may have a winner. It is possible to buy gluten-free instant noodles from several outlets in America and elsewhere because suppliers get their ingredients from sources that make sure their noodles contain no gluten.
Not every farmer grows the ingredients that are guaranteed wheat and gluten-free, but some do so, and many American suppliers import their products from countries in Asia, for example, where wheat- and gluten-free products are grown and harvested – also for the export market.
Depending on where you buy your noodles, you may be able to find noodles that are not only gluten-free but also perfect for vegans and customers that prefer kosher cooking. These noodles are available in the US and elsewhere and have become a great source of tasty, nutritious food for those that want to avoid gluten.
