A Step-by-step Guide To Preparing Delicious Indian Mutton Curry

Nothing makes lunches unique than a good mutton curry. The traditional Indian mutton curry is a must-try for every meat lover. If you have not yet enjoyed a good mutton curry yet, this recipe should help you. Here is a step-by-step guide:  
 

Before preparing any recipe, make sure you marinate the mutton pieces well. Marination makes the mutton tender and adds flavour to it.
Wash the mutton curry cut pieces neatly before you marinade them. Once they are clean, drain the excess water and transfer it to a bowl to marinate.
You could use oil or yoghurt to marinate the meat. Add basic spices, squeeze a lemon into the marinate mixture, and blend them well. Let the marinated meat sit for a while before cooking it.
Take a pan, preferably with a tight lid, to prepare the curry masala. Main a low flame and let it heat for a couple of minutes before adding oil. When you notice the oil is heated, add spices to it.

... spices for 10 minutes. Add salt to taste. It balances the curry and speeds up the cooking time.
Add a tablespoon of turmeric to the sautéed onions. You can add turmeric at the later stages of cooking as well. However, it is ideal to add them early on to reduce the smell of raw spices.
Once the curry masala is ready, add pieces of marinated mutton to it. Now, add ginger garlic paste in adequate proportion to the pan. You can make ginger garlic at home or source it from any store.
Continue to slowly cook the mutton curry cut pieces with the masala for some time. Alternatively, you can add the mutton mixture to a pressure cooker. This also cuts down the cooking time considerably. Three to four whistles should be enough to cook the meat. You can consider cooking it for another one to two whistles if you feel the meat is still not cooked.
If you continue with the pan, cover them with the lid and cook the meat on a low flame.
Pick up the lid to check if the mutton curry has cooked well. Look for signs of simmering to know if the curry is entirely cooked.
Transfer the mutton curry to a bowl and garnish it with coriander leaves and other seasonings. You can choose to serve the curry with some delicious parathas or steamed rice.
