Mutton is meat harvested from a full-grown sheep. It is a popular choice of meat among non-vegetarians. Whether a regular get together or a grand occasion, it is the go-to dish many Indian households prepare. It is tasty, has exceptional flavour, and is easy to chew, unlike other types of meats.
But all of this depends entirely on the quality of your mutton. If it is not fresh and tender, it cannot bring out the authentic flavour in the dish. It will fail to satisfy your tastebuds. So when you buy mutton online or from your local butcher shop, inspect its succulency first. The following factors will help you in doing so:

Colour

Fresh mutton typically has a deep shade of red. But in some cases, it can also have a slightly purplish hue. This does not mean that the mutton is stale. It simply implies that it has been exposed to oxygen for some time.
However, if it appears to have a greyish tone, refrain from buying it. It is an indication that the mutton is spoilt and unfit for consumption.

Smell

Mutton usually ...
... does not have a strong smell. It does, however, have a raw funk evident in all kinds of meats. But it is not too overpowering. So if you can smell a subtle gamy odour, you need to be alarmed. It is a sign that the mutton is not the freshest of all.
Thus, you should inspect its smell as soon as you receive it from the meat delivery online store. If you are dissatisfied, you should return it to them through their no questions asked return policy.

Texture

The texture of your mutton says a lot about its edibility. So start by getting a good feel of it. If it is truly fresh, it should feel firm. It should also spring back to its original size when pressed. But if it is loose and flimsy, it can mean that the mutton is stale and old.

Food safety standards

If you buy mutton online, make sure that the meat store follows humane transport practices. You should also enquire about their safety standards. After all, you want to deal with sellers who do not treat their meats with harmful hormones and antibiotics.
Reliable online meat sellers ideally have certifications to back their claims. So run a quick scan on the website before you make any purchase. If the store you have selected does have such credentials, the chances are that the mutton will be safe to consume.
