what is palak paneer?
Palak paneer is a gravy-based dish.
There are two major ingredients of this dish namely cottage cheese (paneer) and spinach(palak).
It tastes best when prepared during the winter season because that is when palak tastes the best.
Pieces of paneer are cooked in spinach-based gravy and some spices. For a richer preparation cream is also added
In some restaurants, besan is also added to make the gravy thicker.

Saag and palak are largely considered green Indian recipes, containing green leafy veggies, onion, ginger, garlic, chilies, and Tumeric. The two dishes may sometimes be confused with each other, but do contain different spices and dairy ingredients. Palak is a type of saag – the word for green leafy vegetable recipe in Hindi.

Palak Paneer and Saag Paneer Recipe can be made in so many ways. Everyone has a different recipe, but basic differences are the following;
Basic Green Leafy vegetable Difference:
Saag refers to all leafy green vegetables; a true saag curry includes individually or blends of mustard greens, Bathua, Kale leaves, turnip, radish, and fenugreek leaves as well as spinach leaves. Palak is the Hindi word for spinach. Thus, the only greens in a palak curry are green spinach leaves.
Spices Variations Difference :
Dozens of recipes for saag and palak curries exist; the slight variations are determined by family tradition and cooks’ preferences. Saag generally contains a blend of spices known as garam masala, which usually contains coriander, ginger, cardamom, and black peppercorns. Garlic also has a big presence in this green popular curry. Palak relies on cumin, fennel, and coriander for flavor, with a bit of cayenne and red chiles for heat. Garlic is generally avoided from authentic Indian palak curries.
Dairy ingredient Difference:
Saag Paneer tends to be richer and creamier, due to the addition of heavy whipping cream at the end of the cooking process. Palak Paneer curry sometimes uses yogurt, instead of cream, as the dairy ingredient. This results in a drier sauce that has a distinct tanginess. The yogurt gets stirred in at the end of the cooking process too, but it can curdle when warmed, so cooks often stir a small amount of cream into the yogurt before adding it to the curry to prevent the curdling without adding too much milky flavor to the palak.


What is a really good palak paneer recipe?

In palak paneer, spinach or palak as it’s called in Hindi is blanched and pureed. It’s then cooked with spices and simmered on low heat with a paneer. The cream is added to cut down on the bitterness of the spinach leaves but you can also use milk or yogurt instead. No harm in cutting down the calories right? Best served with some matar pulao/ tandoori roti/ naan and chilled cucumber raita, a divine combination.

INGREDIENTS:
500 Gram Spinach, pureed
15-16 Paneer cubes (Can be substituted with tofu as well)
2 Tbsp Oil
1 tsp Cumin seeds
1 Bay leaf
1 tsp Ginger, finely chopped
1 tsp Garlic, finely chopped
1 cup Onion paste (boiled), grated
1/2 Cup Tomato, pureed
2 tsp Salt
1/2 tsp Garam masala
1/2 tsp Red pepper, powdered
1/2 tsp Coriander powder
2 Nos Black cardamom (crushed)
1 Tbsp Cream
METHOD OF PREPARATION:
Boil spinach in a pressure cooker and grind it to make palak puree.
Heat oil in a pan and fry paneer cubes in it until golden brown.
Remove the paneer cubes and put cumin, when it splutters, add bay leaf.
When it starts to crackle add ginger, garlic, and onion paste. Cook until it gets pinkish-brown in color.
Add salt, garam masala, coriander powder along with red pepper. Stir till well mixed.
Now add tomato puree and stir fry over medium heat.
Add spinach and saute for 2-3 minutes.
Now add paneer cubes to the mix and turn around a few times to completely mix it with the palak gravy.
Pour some cream over, mix well and serve hot
Are paneer saag and palak paneer the same?
Palak Paneer - > is a North Indian recipe where paneer cubes are simmered in spinach gravy with a few spices. In this only spinach, the leaf is used.
Saag Paneer -> is another Punjabi recipe where you use mustard greens are used as the main ingredient along with spinach and Bathua.
Saag word is used especially with mustards green+spinach+bathua or methi leaf combination.
Like so ka saag is prepared using all three greens and if you add paneer cubes in the saag it will be saag paneer. Hope it is clear now.
