Today, there have been several companies with an inclusion of bacon jams and delicacies entering the market. But earlier, this was not the case. Because, bacon meat was always considered as impure and unhealthy by the Indian society. Most of the Indian population was hooked to the phrase of, ‘unclean meat,’ since it led to religious divisions, as it was considered sacred in the practices of Islam. Yet, the food culture provoked by the internet today, has found its market in the country.
For instance, in metropolitans like Delhi and Mumbai, sale of bacon has been seen in the form of chops, jam and fries. How? Being open and experimental with food, especially among youngsters is the key. The reason behind India becoming an ideal market is due to streaky bacon being available at cheaper prices. Anyone can buy bacon online, without bacon just being for the rich.
In fact, there are chefs and food bloggers that specifically try to perform a deep-dive search on the internet and the market, and are on the go to include items that were initially not considered ...
... healthy. The reason why bacon was considered unhealthy, was because, about 68% of the calories present, come from the bacon fat. Half of it is saturated and eating it can cause an increase in heart diseases and stroke. Yet, studies change and each year, come up with a different conclusion.
Similarly, there were studies highlighting that bacon does contain essential micronutrients that support muscle strength and heart health. One can also find 50% of a material inclusion: phosphorus and selenium. Bacon has now formed its grounds in local dishes. For instance, Chef Udit Maheshwari, the Co-Founder and Chef Partner at Pitaara in Delhi has brought ‘Bacon Kalimpong Kulcha’ to the table. All he needed was dough, Bandel cheese and salt. He specifically wanted the cheese to stand out for a smoky, crumbly and salty effect.
Since it adds a touch of perfection to Indian food, the cheese adopted its name from a town in Kolkata, Bandel. Want a recipe? We’ve got you covered.
You need:
Dough
- Refined flour: 350gm
- Baking soda: ¼ tsp
- Baking powder: ¼ tsp
- Salt: ¼ tsp
- Yoghurt: 20gm
- Vegetable oil: 15ml
- Water: 200ml (Lukewarm)
Filling
- Paneer: 60gm
- Bandel cheese: 140g
- Coriander: ½ tsp
- Green chillies: ½ tsp
- Turmeric: a pinch
- Salt
Method
- Since there is an involvement of cheese, ensure to soak the cheese in lukewarm water on an overnight basis.
- Mix up all the given ingredients for the dough and pour in oil, along with yoghurt.
- To knead the dough like any other, slowly add in water.
- Now, cover the dough with a cloth and keep it away for 2-3 hours.
- Let’s come to the filling, shall we? Have a look over the cheese that we had soaked. Peel it and grate it with a grater. We’re sure every Indian household would have a grater.
- Grate the paneer and pool in turmeric, green chillies and coriander.
- With this, the dough is likely to double. Punch it down. Segregate the dough into 10 balls and brush it with flour. Let that rest.
- Take the dough and flatten it out. Add in a tbsp of the mixture in the centre and cover it up.
- Finally, cook them in an oven, apply butter and serve.
While chefs are busy mixing their hands in for exotic bacon recipes, the market has more to offer. One can also research for bacon momos. Yes, you heard it right.
