You can pick from a variation of vegetables. Some of my favorite include green peas, pigeon peas, carrots, parsnips, pureed or finely chopped greens (kale or spinach), tomato, potato, green beans, corn, etc
Ingredients
1/4 cup rice, rinsed well
1/4 cup moong daal, rinsed well
2 cups water
1/4 cup finely chopped vegetables
2 tbsp ghee
1/2 tsp jeera/cumin seeds
1 tsp lemon juice
1/4 tsp turmeric
garlic and ginger (optional)
Instructions
INSTANT POT METHOD
Add all of the ingredients to the Instant Pot

Close the lid and set the vent to sealing so no air releases during the cooking process.

Manually set the Instant Pot to 20 minutes, high pressure (or push the porridge button)

Let the Instant Pot naturally cool down and drop the valve before opening the lid.

Serve as is, with plain yogurt, and/or a dollop of ghee.
