With both floor scales and platform scales, determining net weight is as simple as placing your food container on the platform, and then pressing a button to reset the scale to zero. Some scales also come with attached, easy to clean containers, and more advanced electronic scales allow for additional mathematical formulas and functions, giving the opportunity to add new ingredients to a mixture or recipe without having to measure each unit or ingredient separately.

Food scales are so vital in commercial kitchens not only for accuracy, but to avoid waste of food and ingredients. By receiving an exact measurement via scale, it gives the preparer little room to be left with excess. Using a food scale in restaurants also regulates the quality and consistency of food served and ensures exact portion and serving control. Customers have high expectations when it comes to quality of food, so consistency in food preparation is key. While kitchen scales are a nice addition to a domestic kitchen, they are a necessity in the commercial realm.
