In the summer, no matter what items ferment, the fermentation speed becomes very fast, so how to drink Puer tea, how to hide it? At the moment, Spring has just passed, and Summer is approaching. In the hot summer season, tea is naturally indispensable as a traditional drink to relieve heat. How to drink Pu-erh tea in summer and what should be paid attention to in summer collection? Here, I summarize the following experiences for everyone:

The weather is hot and sweaty, and tea is rich in potassium. Drinking tea can replenish water and potassium lost from sweating. It is a good product in summer, but it should be reminded that no matter what type of tea, only proper drinking Only really good for health.

Pu-erh tea can be divided into raw tea and cooked tea according to whether it has undergone the fermentation process. Raw tea has not been fermented artificially, and is directly pressed into compacted tea in the form of cakes, bricks, tinctures, or stored in loose tea. The newly produced "Sheng Pu" has not undergone sufficient storage and aging, and the basic components such as caffeine, tea polyphenols, and catechins ...
... in tea have not been fully converted. It is also relatively strong. Because of the taste of green tea, some people like to drink it in the summer to play a role in cooling the heat, eliminating heat and quenching thirst.
However, experts also warn that people who have raw tea have bitter cold, spleen and stomach deficiency, and insufficient stomach yin are not suitable for drinking too much raw tea, otherwise they will increase the feeling of discomfort.

Pu-erh cooked tea is an artificial pile technology successfully researched in the 1970s. By controlling the fermentation temperature, fermentation humidity and fermentation time, the Pu-erh tea's fermentation process and quality change are accelerated, and then loose tea or pressed into bricks, cakes, pupa And other forms of storage. The cooked tea tastes mellow and lubricious, and has the effects of warming the stomach, losing weight, and reducing fat. It is suitable for people with cold and weak bodies. For the elderly and women, drinking in summer can also have a good health effect. However, people who are hot and susceptible to fire should dilute the cooked tea when drinking.

As for the storage of Pu-erh tea, it is qualitatively different from the storage of other teas. Most tea collections are pursuing "preservation" to prevent oxidation of tea, and "preservation" has become the starting point and purpose of all measures. Pu-erh tea is different, for fear of its "fresh", the pursuit is to accelerate the oxidation of tea, the older the better, "the older the more fragrant." The "aging" process of Pu-erh tea is actually a process of "oxidation". The activity of tea polyphenol oxidase is in the range of 20-40 ° C, which increases with increasing temperature. Above this temperature, the enzyme activity decreases with increasing temperature. The activity of microorganisms also increases with the increase of temperature and humidity, but the temperature is too high, which will lead to the inactivation of enzyme activity; too much humidity, tea is prone to mold and affect drinking value. It is best to control the water content of Pu-erh tea at 8% -10% and the storage temperature between 20 ℃ -30 ℃.

Keeping the ventilation and light of the storage environment, providing the necessary temperature and humidity, and preventing pollution are the issues that should be paid attention to during the storage of Pu-erh tea. For ordinary families, it is best to store Pu-erh tea near the balcony next to the window, and open the window sooner or later to keep the air fresh and convective. This is conducive to the combination of tea and oxygen in the air, and non-enzymatic automatic oxidation occurs to accelerate "Chen ". "Translucent" preservation refers to the preservation of Pu-erh tea under "natural light". Tea leaves must not be exposed directly to the sun, and "dark" environments should be avoided as much as possible. Light can cause photo-oxidative degradation of chlorophyll, which can cause browning of tea. The effect of light and wind accelerates the aging of tea and gradually forms the quality characteristics of Pu-erh tea, which is "red and thick in soup, sweet in taste, and more aging." Because Pu-erh tea can quickly absorb the odor of other substances, household storage of Pu-erh tea should avoid common odors such as household oil fume, cosmetics, health balls, spices (such as air fresheners, mosquito repellents) and the body's own " Smell "pollution.

In summer, excessive temperatures (which may cause the tea to ferment and become sour), strong light, and items that are more likely to emit their own odor at high temperatures are all issues we should pay attention to when storing Pu-erh tea. Especially summer is a rainy season. The average humidity in the coastal areas of southern China, especially when the rainy season arrives, often exceeds 75%. In order to prevent the mildew from being absorbed by a large amount of hydrophilic compounds in tea, it is recommended to open the window or ventilate it in time Dehumidify to distribute moisture. Tea can be stored in a purple sand container and stored in a relatively cool and dry storage.
