For instance, our Asian Decker, which takes a classic club sandwich structure (the triple-decker), and adds east Asian flavor by swapping the turkey for Ichiban teriyaki chicken. Teriyaki is an ancient Japanese cooking technique, wherein chefs broil foods with a glaze of soy sauce, mirin, and sugar. Soy sauce we all have some acquaintance with, but mirin is a common Japanese condiment made from rice wine that became popular during the Sengoku period of civil war. It’s used to attain that elusive “umami” flavor—a savory taste often associated with broths and meats. It brings “body” to a dish, or sandwich, in this case. Along with umami, Ichiban teriyaki chicken brings with it notes of ginger, garlic, and brown sugar.
Another of our signatures is Ja-Make-Me Crazy, a wrap made with jerk chicken, salsa, lettuce, tomato, corn, red onions, and melted Vermont cheese. Jerk refers to a way of cooking chicken by using a marinade of allspice and habanero peppers, then slow-smoking the meat over pimento wood. It’s the barbeque style of the Caribbean.
