Gyro Sandwich: Tzatziki and Tandoori Paneer Tikka with Pita bread
One day my entire gang and I were partying at a friend’s place, and one of my friends had made this gyro sandwich. The sandwich looked interesting, but I couldn’t eat it as it was non-veg. So, the next day I created the veg version of it using tandoori paneer with Pita bread and tzatziki.
Ingredients:
For the Tandoori Paneer Tikka:
500 grams paneer, cut into cubes
2-3 tablespoons oil
For the marinade:
2 finely chopped cucumbers
1 cup thick yogurt
1 finely chopped garlic clove
1 1/2 teaspoons lemon juice
1 teaspoon honey
1 teaspoon lemon zest
1 teaspoon chopped mint
Salt and pepper to taste
For the Tzatziki:
2 finely chopped cucumbers
1 cup thick yogurt
1 finely chopped garlic clove
1 1/2 teaspoons lemon juice
1 teaspoon honey
1 teaspoon lemon zest
1 teaspoon chopped mint
Salt and pepper to taste
To Assemble the Gyro:
Ready-made pita breads
Tandoori paneer tikka
Tzatziki

... 1/2 cups mango red pepper chutney
3 large thinly sliced onions, caramelized in oil
3 large thinly sliced tomatoes
2 green julienned bell peppers
1 1/2 cups julienned cabbage
Making of Gyro sandwich:
To make Tandoori paneer tikka, take a bowl and add all the ingredients for the marinade section except for paneer. Mix well and then add the paneer cubes. Mix again and make sure that you coat the paneer cubes with the marinade. Cover the bowl and keep it aside.
Take a non-stick pan and heat some oil in it. Once heated, place the paneer cubes on wooden skewers and then place the skewers on the pan. Fry paneer until golden brown on all the sides. Keep them aside.
To make tzatziki, mix together all the ingredients in the Tzaziki section except the cucumber. Mix well. Sprinkle salt and black pepper powder on the cucumber and keep it aside for 20 minutes. Squeeze out all the water from it. Transfer the drained cucumber into a bowl and add chopped mint and refrigerate for about an hour.
Now take the round of the Pita bread, and spread some caramelized onions, tomato slices, bell peppers, and cabbage along with Tandoori paneer tikka. Top it up with chutney and some mint. Place another pita bread on it, and yummy Gyro sandwich is ready to eat.
