No one in the world has ever said that they hate Indian food. Yes, a few foreigners may not be able to digest everything that comes on the plate because of different spices and cultural differences, but there is something that makes Indian foods special.

Diversity

Just like the culture and people of India are diverse, the Indian food is equally diverse throughout the country. You can go to any corner of the country and find specialty foods there. In North India, you will find spicy and delicious meat cuisines. Go to South India to find amazine vegetarian dosas, uttapams, idlis, and vadas. Similarly, West India, East India, and North-East India also have their amazing collection of authentic cuisines that are matchless.

Complexity

The Indian foods are complex to cook unlike the western foods. You need to practice one cuisine for years and years in a row to perfect them. A modest-looking chapatti in North India takes years of earnest exercise to perfect it. For those who know what a perfect chapatti is, they never ...
... like to eat a chapatti that is nor round, soft, and fluffy. Ask any Indian, and you will know what a perfect roti or chapatti is. They will often quote their mother while mentioning a perfect chapatti. When a simple thing like chapatti can so much practice, just imagine what kind of training the makers of chicken or mutton biryani would require.

Inconsistency

The variation in cooking one item can be huge when you are in India. You can taste paneer butter masala in one restaurant, love it, and order it again in the next restaurant only to find that it tastes completely different from what you had eaten earlier. Even one lady in a household may not maintain a consistent taste when it comes to preparing the same dish again and again. This is not because the Indians are not perfect at cooking things; it is just because they use their guesses more than the accurate measurements of condiments and spices.

Rich use of herbs and spices

It is evident from the history of India that the natives have a rich knowledge of spices. They have been using dozens of spices and herbs since many centuries. They know the way to balance their condiments, and adding taste to any food does not mean making it fiery. The cuisines that have a very mild taste are also delicious, the garlic rice, for example does not contain more than two spices. Indians have a specialty to create any cuisine according to the taste of their guests.

Not accepting spice mixes

When you go to any western country, you will find the readymade spice mixes for almost every cuisine you ask for. It does make cooking things easier, but that is not the Indian way of cooking. Every chef in the Indian kitchen prefers to mix his or her own spices according to their preferences. That is why; you will always see Indians having a few basic spices in individual boxes in their kitchen, which they use to create their own mixes. Moreover, they also prefer to use fresh herbs, rather than their powdered or frozen forms.

The best place to taste all kinds of Indian cuisines is Delhi or Mumbai. These two metropolitans have restaurants from every possible corner of the world. You can take a car hire in Delhi without driver or take a cab in Mumbai to visit the famous restaurants in these cities. Apart from the famous outlets, there are many hidden gems in these cities, which may not have a huge name in the market, but they do attract a large number of people.
