Rice flour is gluten free. In Southeast and Far East Asian cuisines rice flour is used to make rice noodles. In India rice flour is used extensively, especially in the South, in infinite ways. Glutinous rice can be used either milled or unmilled.

Rice flour is typically enriched with vitamins and minerals, including iron, folic acid, and other B vitamins. There are many gluten-free flours available and each has its own characteristics including protein content, taste, density and weight. A low FODMAP diet — which stands for Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols — is often helpful for people with IBS. Gluten-free is part of this diet. Although some have suggested that a gluten-free diet may help alleviate the signs of autism in children, there have been conflicting findings.
