Quesadilla is a preparation made from tortilla, either corn or sometimes even wheat. With high resemblance with the Indian roti (flat bread), one can easily recreate this dish in a matter of minutes. The most popular form of quesadilla is the one with the cheese filling but you can always opt for the filling of your choice giving it a healthier twist. Try this cheese quesadilla recipe which can be devoured as snacks or even main course. Lay the tortillas flat on a plate and sprinkle the cheese of your choice on one half of the tortilla. You can also stuff if with more than one type of cheese. But try not to over fill the tortilla bread. Fold the tortillas in half over the cheese to make a half-moon. Take a knob of butter in a pan and warm it through till it melts and add the tortilla to the pan and cook until it is lightly brown, about 2 minutes. When one side turns golden brown turn the tortilla over and cook the other side. Once done cut it into smaller pieces and serve with the dip of your choice. Here is a brief overview on how to make vegetable quesadilla. In a large pan, cook the vegetables of your choice. You can opt for healthy and colourful veggies like bell peppers, zucchini, squash, onions etc. Also drop in a handful of mushrooms and baby corn. Cook the vegetables in olive oil for a more healthy approach for about 10 minutes or till the vegetables soften. In another skillet place a pre made tortilla bread. Place about 3/4th cup of the cooked veggies onto one side of the tortilla. If you want you can also sprinkle a little cheese for added taste. Fold the other half of the tortilla to make a half moon and cook the first side till golden brown. Repeat with the other side for another 2-3 minutes. Once done cut it into smaller triangles and serve hot with sour cream and salsa.
