Heavenly Happiness Wrapped In A Slice Of Cake

What happens when you bite into a heavenly slice? You simply close your eyes and feel like the moment won’t leave. A great treat for the little ones and adults, the Paradise Slice as we call it is widely popular. It doesn’t matter if you are a beginner or a professional with great baking skills, this awesome cake slice will add to your credibility as an amazing baker. Some people are even obsessed with this heavenly slice of confection. They can be used as Christmas or Easter treats. You can also add this sweet delight as a dessert in the menu. It’s a popular recipe from granny’s kitchen. Yes! Of course you can ask your predecessors, especially your grandmother if you want to add to its authentic flavour.

Paradise slice is a big hit and as far as we know it has a Scottish origin. The confectionary is almost the same as an almond slice, the one that comes with glace cherries and currants. If you were to welcome your guests over a tea party, this heavenly slice will earn you accolades like no other. Want to peep into the cookbook, to see what all it’s made up of? Here is a list of ingredients that makes it popular:

For Pastry Base

Plain flour, 225gm
Butter, 115gm
Caster sugar, 30gm
One slightly beaten egg

Here are Ingredients for the Filling:

Butter 115 gm
Raspberry Jam, 3-4tablespoon
Caster sugar, 115gm
Quartered glace cherries, 80gm
Almonds, 150gm
Currants, 120gms

Preparing the Pastry Base

Firstly you will need to grease the baking tray with butter and then preheat the oven to around 190 degrees. Now take a large sized bowl and add butter and flour in it. Now rub the same with your fingers. Keep on doing this till you attain consistency like that of bread crumbs. Stir in sugar and add the egg. Whisk the batter well. Transfer the batter to the greased baking tin, lined with parchment paper. Trim excess batter. Of course add some baking beans before you pour in the batter. Bake the pastry for around 5 minutes.

Preparing the Filling

You will not need special cake decorating accessories to deck-up the cake. The filling will do the magic for this heavenly slice. To prepare the filling you will need a large sized bowl. Add butter, cream and sugar in it and whisk the ingredients till they turn fluffier. Add egg and again blend it well. Now, include the cherries, the ground almonds and currants. Mix the batter well. Take a spoonful of this mixture and add it on the pastry which is already oozing with loads of jammy happiness. Now, spread the filling from one edge to the other. Bake the pastry for 30 minutes inside the pre-set oven. After you have baked the same, sprinkle some sugar and allow the cake to cool. You can then cut this cake into equal slices and serve it for breakfast, tea or dinner.
