Experience Blueberry Burst Inside A Royal Bundt Cake

If you have had a recent craving for cakes and were thinking of visiting few of the nearest cake shops in Malta but sadly couldn’t find time to drive all the way to a shop because of lack of time then, its better you consider baking a cake of your choice all on your own. Since the cookbooks are there to guide you, baking a suitable cake would not be a problem for you. If you want to experiment with your baking skills and want to add the much famous ‘berry twist’, think of blueberries and the Bundt cake.
Some people like to substitute the blueberries with cranberries, but here you may simply want to try out the blueberry Bundt cake.



The Blueberry Bundt Cake


There are two primary stages for baking the Bundt cake. First it’s all about creating the batter and storing it in a container, preferably an airtight one. Now, refrigerate the batter for the next two days. On the other hand you can bake it instantly and then store it, well covered for around 2 weeks. The process will add glaze to the sweet confection.



Are you ready to bake the Bundt cake yet? The berry burst inside of the cake is a specialty. Here is what you will need:

1 ½ cups of unsalted butter set in room temperature
1 tbsp of orange zest
2cups of sugar (granulated)
2 teaspoon of vanilla extract
5 eggs in room temperature
2 cups flour
¼ teaspoon of baking soda
1 "hearty dash bitters"
1 tbsp of lemon juice
¾ tsp sea salt
1 cup of almond flour
2 cups heaped with blueberries
¼ cup orange juice

For the Crème Fraiche Glaze

3 cups of confectioner’s sugar
3 tbsp of crème fraiche
2-4tbsp water
1tsp of vanilla extract
Pinch of salt

First preheat your oven to around 350F. Now place a rack in lower middle part of the oven. Now apply flour and butter inside the Bundt pan. Beat sugar, butter and zest for about 2minutes. Add eggs. Don’t rush into adding eggs, add them one after the other and beat till smooth. Add bitters and vanilla extract and combine. Take a separate bowl and mix together flour, salt and baking soda. Now, add the dry mixture to the batter. Pour mixture in three quantities and in between pour juices. Beat slowly. Stir the blueberries. Add batter to the pan and bake the cake until the skewer you insert in the centre comes out clean. Place the cake in a wire rack and allow it to cool. Allow it to cool for another 20 minutes. Pour around half of the glaze over the Bundt cake. Again pour the next half.



To prepare the glaze you will need to take a large sized bowl and then pour in confectioner’s sugar. Beat crème fraiche, vanilla extract, salt and little bit of water (2 tbsp). Now, add the batter into the sugar and add some more of water to create a glazy batter.



Voila! Your blueberry Bundt cake is ready now.
