While baking, this powder is paired with baking powder so that baking powder can take care of the acid component in fermenting baked goods. Whereas the natural one does not have its acid stripped. It contains all its acid intact and is generally lighter in color.It is also paired with baking soda the metallic taste released in the sodium carbonate is softened by the acid in natural cocoa powder.
Dutch cocoa powder and the natural one both are not at all interchangeable. It’s not a good idea to substitute one for the other.This is due to the fact that when we substitute, we startfrettingwith the texture and taste of the bakinggoods. But still you can use natural cocoa powder in thefood if you run out of the Dutch one.
