The dark chocolate cocoa powder isthe most common ingredient in many baked goods comprising of brownies, cookies and cakes. But people are unaware of the two types of cocoa powder available in the market. They give an array of tastes to the baked goods.
How to make cocoa powder?
To prepare dark cocoa powder, cocoa beans are harvested and converted into cocoa liquor. Then the majority of the fat is eliminated from the liquor through its processing. Afterward, we obtain cocoa press cake which is then grounded into fine cocoa powder. This cocoa powder contains at least 10-12 percent fat content. The prepared fine cocoa powder is the natural cocoa powder which is sometimes alkalized to raise the pH levels of the powder to improve its color and taste. This alkalized powder is Dutch process cocoa powder.
Difference between Natural cocoa powder and Dutch cocoa powder:
Dutch cocoa powder is the one which is washed in a potassium solution to neutralize its acidity. The process of Dutching provides darker color to the cocoa powder. While baking, this powder is paired with baking powder so that baking powder can take care of the acid component in fermenting baked goods. Whereas the natural one does not have its acid stripped. It contains all its acid intact and is generally lighter in color. It is also paired with baking soda the metallic taste released in the sodium carbonate is softened by the acid in natural cocoa powder.
Dutch cocoa powder and the natural one both are not at all interchangeable. It’s not a good idea to substitute one for the other. This is due to the fact that when we substitute, we startfrettingwith the texture and taste of the bakinggoods. But still you can use natural cocoa powder in thefood if you run out of the Dutch one.
Role of cocoa powder in cakes:
Cocoa powder gives a rich flavor of chocolate to the cake with the dark color. When this is combined with other chocolates in recipes, then it produces a more intense chocolate flavor than the one which is prepared without cocoa powder.Almost all recipes sift the cocoa powder with the flour but when the boilingwater is added to it, it imparts its full flavor.
