To delve into what is that essential ingredient that goes into chocolate making and that which makes everyone, young and old swooning is essential. Chocolate liquor is the key. Now, a milk chocolate for example would contain 10%, sweet chocolate around 15, semisweet and bittersweet chocolate chips would have 35% of liquor content. Then there is the unsweetened variety of chocolates. These comprise of only cocoa liquor that is then styled into a bar shape. Another variety of chocolate is the white chocolate. This variety is made without any cocoa liquor added to it. However, 20% of the ingredient is the second derivative of the cocoa grind which is cocoa butter while 14% of it is a mix of milk products. The dark chocolates that everyone remembers in a jiffy comprises of sugar, vanilla, cocoa butter, lecithin that acts as an emulsifier in addition to the chocolate liquor. The likes of bittersweet chocolate chips as well as the semisweet chocolates fall under the reins of dark chocolates.
