Head down south of India, to the state of Tamil Nadu, and you’ll see a dish being served at restaurants without exception, the curd rice. Then you’ll notice another peculiar aspect – your plate of curd rice will never come without a dash of that spicy, tangy accompaniment, the pickle.

The Curd Rice-Pickle Combo

There are several different kinds of pickles that go well with curd rice. Of the many different varieties of pickles, the maavadu, or mango pickle is perhaps the most popular. People down south and especially the Tamilians love to have mangoes pickled in red chili paste, salt, and oil on their plate of thayir sadam, or curd rice.
The mango pickle is typically made early in the summer when mangoes are not even an inch long. The south of India experiences sweltering heat in the summers. Thanks to this heat, vegetables are easily sun-dried, mixed with spices, and made into a pickle.
One of the ingredients that adds it own unique flavor to the maavadu is castor oil.
Lemon pickle is another hot favorite in Tamil Nadu. Some of the other popular pickle choices are mango avakkai, garlic, onion, tomato, green chilies, and ginger garlic thokku.

In the south, it’s customary to eat curd rice at the end of lunch and dinner. It helps in digestion and eases your burning tongue caused by the spicy main course meal. By adding a dash of pickle, the meal not only tastes a lot better, it also keeps you healthy.
