Hold it to see if it is comfortable enough. Check for the quality of the steel and also how much of the steel is in the knife. There should be no welding and joints in it. It should be sturdy. Good quality knives have a good balance. The weight should be equal on the blade as well as the handle. Light weight ones are good speed chopping and heavy weight ones are good for cutting hard and thick ingredients. Lastly check and see that the handle is made of good quality. Keep them in good condition and well sharpened.
