That is why the International Riesling Foundation developed a voluntary Riesling Taste Profile with suggested guidelines for winemakers along with a graphic design which we hope numerous will use on their back labels to help guide consumers. The design is shown beneath, with 4 different choices of wording and also the understanding that the winemaker will figure out exactly where to place the arrow.
Riesling vines are tough. They thrive in cold climates, on steep hillsides, and in marginal soil. The green- skinned grapes ripen later than many other varieties, and occasionally are left hanging on the vine to produce sweet late harvest wines or even ice wines when the grapes really freeze on the vines. Great wines are produced in the vineyard, so the important is for winemakers to harvest the grapes at the optimal balance of all-natural sugar, acid and pH.
